Carrots And Patotoes Oh My

Mama always taught me to peel potatoes and carrots. But I've found you can save time and add fiber by just giving them a good scrubbing especially carrots. Potatoes can be chopped and fried and you'll never notice the peelings. I've found with carrots you can shred, boil or roast with no problem.

    they are good any old way...potatoes & carrots.
another way would be to mash them together with a light margarine. mmmmgood.

    Also, the skins are full of vitamins so you will get more this way.

I always used to leave the skins in my mashed potatoes but my wife just don't like them that way.
