When boiling eggs, add baking soda to the water and you will always have easy-peel shells!! The baking soda changes the Ph of the water, causing a chemical reaction in the egg, making the shells slide off easier!!

I use about a couple Tbsp. for a dozen eggs in my Dutch oven. Peel when warm for best results.. My signature appetizer is deviled eggs, so I was thrilled to find this and use it!! Pickie98

After the cold water trick, I usually crack both ends, then roll. I'll try adding the baking soda to make it a 100% successful method.

I found the only way for me to get a perfectly peeled egg is the roll the cooked egg on paper towel gently but with enough force to fracture the shell all over. The shell just peels of in 1 or 2 pieces. It takes a couple of tries to get the right amount of cracking, but it works. Oh yearh, so does using old eggs.

I will have the try this. The only thing I've come close to getting eggs to peel easier is to cool them fast with ice water. Still have some that don't peel well.

Why are some hard-cooked eggs difficult to peel?
Hard-cooked eggs may be difficult to peel if they are very fresh. This is because an egg shrinks inside during storage, which pulls the inner membrane away from the inside of the shell. For this reason, a hard-cooked egg will peel more easily if it has been stored for one or two weeks before it is cooked.
After boiling, crackle the shell all over by tapping gently then hold under running water to make peeling easier. Eggs may be harder to peel if they are not cooked long enough.

Hard cooked eggs should be kept refrigerated and used within one week.
Boil potatoes with skin on then when cooked, the skin will peel right off. Much easier than peeling potatoes. Use a tiny bit of evoo, vinegar & add herbs for flavor..even a boiled egg for protein. Skip the mayonnaise. 4
I always had trouble peeling a hard boiled egg without taking chunks of white with the peel. Using eggs at least a few weeks old helps, but when called upon with short notice, sometimes you don't have the luxury of "older" eggs. Here's the solution:

Boil the eggs as you normally would. While cooking, prepare an ice water bath to which you have added 1 T. of baking soda. Drain and immediately immerse the eggs in the ice water/soda bath. The soda does something to the PH and you can peel them like they have a zipper!
