I make up a new Frig Salad Snack every other day, with things I really like: kidney beans, cukes, cilantro!, sweet onions, avacado, garbanzo beans, anything else I can find in the fridge. I add a dash of olive oil (for a treat) and a bunch of vinegar and a sprinkling of salt. This is covered up, the longer it sits, the better it is. If I am in a rush I throw some in a tortilla, and there is lunch. Or put it on crackers. Or just eat a half a cup or so for a quick pick up. I love it

On the Holiday Grill Veggies to help your diet...SO VERY EASY
Grill up some veggies....Eggplant is especially good. When grill is hot, slice eggplant about 1/2-inch thick. Whisk together olive oil / vinegar, garlic,herbs, pepper. Brush both sides of the eggplant slices with the oil & vinegar mixture. Grill 20 minutes. Or how about grilled Brocolli w/lemon, or Zucchini, squash, asparagus, peppers, or mushrooms drizzled w/olive oil..make Vegetable Kebabs~marinate oil and vinegar mixture for 15 minutes, then grill for 12 minutes. Try foil packets.

If you making vegetable kabobs, choose vegetables that have the same cooking time. Baby tomatoes grill much quicker than sliced carrots. Other choices are tomatoes, onion, asparagus, potatoes, sweet corn. Just watch the carbs. NOTHING COMPLICATED ABOUT GRILLED VEGGIES. Grilled Vegetable are EASY!!!
I'm not crazy about vegetables or salad. So in order to get my veggies in sometimes, I make vegetable soup. It's low in calories, and if you can get a broth for the base that is low in sodium, it's pretty healthy and filling. I use celery, onion, carrots, green beans, corn, peas, peppers, cabbage, and sometimes potatoes. If you buy the bags of frozen veggies, it's also very quick and easy!
