I've always had problems safely cutting a winter squash. They are usually so hard that the knife slips off or I end up cutting it lopsided. My mother in law taught me a trick: pierce the skin with a fork or the tip of a sharp knife several times and put it in the microwave (whole) for approximately 10 minutes (depending on the size). Remove from the microwave, grab some pot holders (the squash will be really hot) and slice it in halve and scoop it out. Really easy.

Winter Squashes have hard skins to cut with a knife. I use a pumpkin carving knife to cut the squash. It is so much easier to saw through it than to try and slice it. I started doing this with my Spaghetti Squash.147
Swap out pasta and use a spaghetti squash instead! Cooks quick in the microwave for 5 minutes or can be cooked in the oven for 45 minutes (I prefer oven)! Cook up any veggies and protein you'd usually put in a pasta, and when the squash is done, scrape it out and toss it all together! It's just as delicious as pasta, but for way less calories! 48
I take 1/2 cup of cooked winter (hard-shell) squash and mix in one packet of stevia and 1/2 tbsp. of cinnamon. That's it! It's like eating pumpkin pie without the crust with the added bene of fiber (helps satisfy hunger). You may also use pumpkin pie spice or ground cloves to your liking. Enjoy!
