Try to incorporate a serving of fruit and/or veggies in every meal. It's really not that hard. Just add a half of cup of spinach to your sandwich at lunch, or munch on an apple after dinner for dessert. After about 5 days of doing this, it becomes natural.

I've just started the DASH diet to reduce my blood pressure and more fruits and veggies is on of their recommendations. I sometimes find it hard to eat so much and keep my calories in the proper range but I've found logging in my daily food intake helps a lot. It just takes a long time.

I like to puree veggies or fruits and sneak them into baked goods, mashed potatoes(pureed cauliflower) and in turkey burgers to add flavor. I also add to smoothies to get my intake of fruits and veggies. My son doesn't know that he is eating veggies and doesn't complain.

Reduce or eliminate simple carbohydrates to feel more satisfied when you eat. Replace them with veggies, veggies, veggies. Even whole grains should be limited! It's surprisingly easier than it sounds - once you start replacing simple carbs with complex ones (esp. vegetables, and occasional fruits) it ends up eliminating carb-cravings! This is not a diet, it's really got to be a permanent change, but you will love how much better you feel,
