i have an apple tree. some years it doesnt give much. others, like this year, the branches are loaded and sagging. what to do with all those apples??? pies..applesauce.. i was saying..toss the apples, quartered, in a crock pot. nothing else. no water or anything. set it on high and let them go all day. strain the sauce and either freeze it or can it!!! YUM!!!
yesterday i made a pie. phyllo crust (low fat) splenda and LOTS of spices. i did indulge in a crunch upper crust.

I have made a pact with myself that I will eat mostly whole type foods. It's great b/c they tend to be more filling and lower in calories. It took me some time to get used to not having processed food and junk, but now I crave fruits, veggies, whole grains, and lean meats. I do indulge in some processed foods, but I try to make them healthier things like tofu and lighter cheeses.
I used to hate having to cook just for myself. After a long day of work and the gym, the last thing I wanted to do was cook a meal for myself. So then I discovered that if I can cook a couple of large meals on Sunday, divide them up into containers and freeze I will have dinners for the whole week!
