Making a side salad can take a lot of time. Instead, purchase a cheap compartmentalized serving tray with a lid (less than $5 at Walmart), cut up your lettuce and a few veggies of your choice and keep them in the fridge in this serving tray.
I found a basic serving tray at Walmart or a dollar store. I chop up lettuce, tomatoes, onions, cukes, etc. That way they are always ready to go and I am not washing and preparing a salad for a half hour each meal.
If you have trouble getting in enough fruits and veggies, then by all means BUY the pre-cut trays and keep them in the fridge. You are worth it! In the past, you wouldn't have hesitated to buy chips, or other treats so think of the trays as your NEW you treat!
I keep a small tray of measured snacks in the fridge for those moments when "I just have to eat!" Right now I have a bag with a few carrots and celery sticks, 2 bags of walnuts (1/4 cup each), and 2 packages of roast beef (2 oz each). I found some mini bagels at 100 calories each and have cheese sticks on hand. This is keeping me sane, somewhat!! 381
