Cut 2 boneless chicken breasts into strips. Cut 1 red, 1 green, 1yellow and 1 orange bell pepper into strips, slice up one onion. Saute the chicken in 1-2 T. olive oil, remove to a plate, add peppers and onion to the pan along with 2 T. balsamic vinegar, saute until peppers start to soften, add chicken back to pan and cover and simmer for about 5 min. Just before serving add a little more balsamic vinegar. YUM YUM and so pretty!!!

This is a very quick, fat free and delicious side dish.
Spray a non stick skillet with a little cooking spray and get it very hot. Add chopped mushrooms and stir them continuously to prevent sticking. They give up their liquid first and then as it evaporates they carmelized and turn out delicious. Sprinkle with salt and pepper and serve.
I use my grill to cook practically everything. From chicken to french fries. I line the bottom of grill with foil, cut a few small slits in it and spray with non stick cooking spray, (I prefer canola spray) season, cover food with foil & cook. Quick, easy & delicious4
