To Peel Onions... Place onions on a covered microwave-safe plate and cook for 1 to 2 minutes at full power. Careful, the onion may be hot. I only need to cook a medium size onion for 50 seconds. The skin just peels right off and I don't "loose" so much of the onion this way.
To Remove Outer Skin from Garlic Cloves... Put the cloves in a custard cup and microwave at 80% power for 30 seconds. Allow the cloves to cool enough so you can handle them, then lift away the skin.

I do not add salt to anything cooking. Instead I use garlic and onions and other spices to eliminate the need for salt. Fresh garlic and onions are especially good. I start out by adding a little low sodium Worcestershire sauce and brown the onions and garlic and then add the meat to cook too.

If you hate having a solid block of onion or garlic after moisture gets in your onion or garlic powder, get granulated onion or garlic. It's still small enough to blend into sauces, but large enough that the moisture doesn't make it clump.
