Use WHOLE GRAIN MIXES TO MAKE WAFFLES OR PANCAKES or buy wheat pancakes.Eating a plain waffle can raise blood sugar immediately, so add some nut butter with flaxseeds and/or fruit as the protein from the nuts will cause the sugar to be released gradually. Or simply top your waffle with a soft boiled egg.
When you're baking muffins or quick bread or making waffles or pancakes, you can substitute applesauce (or pear sauce) or mashed ripe banana for a portion of oil. I generally sub 1/2 to 3/4 of the volume for muffins or quick bread, and about half for waffles or pancakes.
For the waffles or pancakes, make sure you've got a good non-stick surface.
