Freeze a cup or two of watermelon, throw in a blender with ice cubes (10 or so) with a Tbl. of lemon juice, and blend away. You can add a tsp. of sugar or sweetner if you wish. Makes a nice cool slushy to enjoy on a hot summer day and it's mostly water!!

Waternelon is high glycemic, a diabetic should limit themselves to 1 cup and definetily talk to their health educator. It has Vitamins A & C, Magnesium. If you scratch a watermelon with your fingernail and see a greenish white color this means that the fruit is ripe. Pick one evenly rounded on all sides. A heavy Watermelon is the juicyest.
