I've tried making my own salad dressing but just not very good at it. I really like Newman's Own Light Dressings but I personally don't care for all of the oil in them so I put the bottle in the freezer for a short time, just long enough for the oil to congeal on the top and I can poor it out. So much better.
make salad dressing with mortar and pestle. pound one half clove garlic with course salt. add one tablespoon olive oil. Then mix well with pestle. Add a pinch of sugar and a tiny bit of mustard. Then add 3 large tablespoons of plain yogurt, and two tablesp. vinegar. adjust seasoning
If you use some plain yogurt instead of OIL in the salad dressing, you get a delicious creamy salad dressing
I abhor low cal salad dressings. I wanted to keep the full flavor of my favorite creamy style dressing but not all the calories. In order to give me that ability I measure out 1 tsp of salad dressing, then I dip the tines of my fork in the salad dressing and pick up a bite of salad. I get a taste of my yummy salad dressing in each bite and use no more than a teaspoon of salad dressing, in fact, usually I use less than that!
