We keep a bag of shredded cabbage on hand to add a healthy kick to meals. Very good on sandwiches as it adds bulk and a good crunch (remember putting potato chips on your sandwich?) Toss a handful into a stir fry or soup. Toss a little with rice wine vinegar for a quick pickle.
Cabbage is highly promoted for prevention of cancer. A compound in cabbage, sulforaphane, also helps protect cells from invasion of carcinogens & even repairs ulcers. Cabbage has a substance that inhibits the conversion of sugar and other carbohydrates into fat, definitely a painless way of dieting. Eat uncooked cabbage, either on its own, or juiced. Shred onto salads, make soup, steam with fennel seeds.
If you are diabetic a Salad should be a part of your daily diet. Cucumbers, radishes, celery, and spinach, Avocado chopped walnuts, slivered Almonds, flaxseeds, sesame seeds, artichokes, shredded carrots and shredded cabbage added to the mix. Add some Turkey chunks, ham chunks, or chicken and low fat dressing. Change it up. Maybe just tomato, red onion and Romaine. Some chopped olives...some many options...just do it!
