Cooking For One? Make The Same Recipe But Immediately Separate One Portion And Freeze The Extra Portions

I have tons of trouble with portion control when I cook. So, when I make a recipe that results in 4 servings, I try to immediately weigh out one portion to use, and freeze the rest in single portion containers - I label them with the recipe name & date using masking tape & a black sharpie.
This method insures that us single folks don't get bored eating the same thing over and over! You will eventually have a freezer stocked with many varieties of homemade single portion entrees, labeled and ready to roll. You can also write the calorie or carb count on the label!

I often cook casseroles, or make rice salads etc, in bulk then freeze in old 500g spread cartons. They stack nicely in the freezer and one carton holds the equivalent of one protein portion, one carb, plus two portions of veg including juices from a stew etc. This cuts down on cooking costs, washing up, and food wastage. It means that if, like me you live alone, you can store a variety of different recipes and have a meal available at a few minutes notice, courtesy of re-heating in a microwave.
Portion Control has been the most difficult part of healthy eating for me. So my secret (I'm sure many others use this technique) is to separate into serving sizes immediately after a grocery store trip. I use small ziplocks or rubbermaid containers and separate my grapes, crackers, almonds, even meats into a serving size portion making it easy to grab a snack or pack a quick lunch.
