a) sauteed onions
Season before browning - the seasoning draws out the water which helps to soften the onions. They will take a few more minutes to brown but the flavour is excellent and the onions will be meltingly tender.
b) scrambled eggs
Season before scrambling to ensure tender scrambled eggs. If you season after cooking the texture will be more rubbery.
Season 30 - 40 minutes before cooking and allow the meat to come to room temperature before cooking.
