Try tracking in the morning so you are accountable all day. It is important to make the time. Set your computer up in the kitchen if it helps, that way all your foods are right there and as you are packing your lunch you are logging it. Only bring to work what you tracked to eat.
Another great option if you have a smartphone is the SP application so you can track the foods on your phone as you eat them. If you are out with your friends, it doesn't look like tracking, but rather texting.

I set up a computer in the kitchen with the monitor on the counter. This allows me to view my online recipes as I cook, log my food as I pack lunch for work or while I'm waiting for my meal to finish cooking, and log my exercise when I first come home.
The kitchen is the central hub of my healthy planning, so it only made sense to use the SP tool in the same place. I doubt I would have done as much logging or reading on SP had I not done this.
I find that I can get lost in time when on the computer playing with my friends on message boards, on facebook, reading e-mail, etc. I set the timer on my stove once an hour to force myself to get up and do something. It may be something like sweeping the kitchen floor, cleaning up the dishes, or it may be something like going out doors and walking around the house a few times. Either way, it keeps me moving and helps me have a concept of the time I spend on the computer.
Chances are, it isn't just the sitting but the electrical charges through the equipment itself that makes people stiffen up. The screen strains our eyes. The mouse gives people carpal tunnel. I couldn't live without it but I recognize the need to get away from it.
