On sunday nights, while cooking that nights meal, I also cook a healthy vegetarian meal for the week's lunches. I portion it out when cool, and have a ready to grab-and-go lunch that I like and is healthy for me. Plus the added benefit of making sure I get some vegetarian meals added to my diet.

Binding for Cutlets------Addition of extra Fibre and taste
Crisp Cutlets--both Vegetarian and Non-Vegetarian need to be crisp to be tasty.Instead of using Bread to achieve this I use Oat Bran for the desired effect..Into the Cutlet mix I add 1 beaten egg and Oat Bran to bind the mix together.Shape it in desired shapes, brush with melted butter and bake.
