On sunday nights, while cooking that nights meal, I also cook a healthy vegetarian meal for the week's lunches. I portion it out when cool, and have a ready to grab-and-go lunch that I like and is healthy for me. Plus the added benefit of making sure I get some vegetarian meals added to my diet.
My husband and I have made it a point to eat vegetarian for at least one day each week (Tuesdays at our house). We used to think about eating vegetarian more often for the health benefits, but this gives us a way to remember to do it.
Binding for Cutlets------Addition of extra Fibre and taste
Crisp Cutlets--both Vegetarian and Non-Vegetarian need to be crisp to be tasty.Instead of using Bread to achieve this I use Oat Bran for the desired effect..Into the Cutlet mix I add 1 beaten egg and Oat Bran to bind the mix together.Shape it in desired shapes,brush with melted butter and bake.
