I have found dry roasted, lightly salted edamame (soy beans) make a great substitute for croutons (found in the Asian food aisle). An 1/8 of cup provides plenty of crunch for 65 calories, 3.5 grams of fiber and 6.5 grams of protein.

I like the added crunch of croutons on my salad. Unfortunately, crouton often have a high calorie content or more fat than I'm willing to invest in. I substitute cubed stuffing. I like the crunch, seasoning and appreciate the minor impact on by nutrition totals.
I use Pepperidge Farm Herb-Seasoned Stuffing (cubed style). A single serving is 37 grams with only 1 gram of fat. I usually use only a half of a serving.
