This Sparked Me!

If I need to make a cake for any occassion I use Extra light Olive Oil instead of regular vegetable or canola oil. Works great and there is no taste difference!

You can always use one of those little cups of lite applesauce instead of any oils....

I have done this, but with a white cake it looked a little green due to the "first cold pressing" of the olive oil.

    Interesting idea!

I also do this and it works! I have even used the classic or regular olive oil and cannot taste the difference. Usually, I also use either egg whites or Egg Beaters. (Both my husband and I need to reduce fat and cholesterol for health reasons.)

I agree that olive oil can be used in place of other fats in most situations.
