I do this with bell peppers what a good idea to do it for onions and garlic.

I do too. But I’ve done this for years. You see, I simply hate the tedium and mess of prep for dishes. So, quite often if I don’t have the stuff already chopped up, I just leave it out.
By chopping larger quantities (2 onions at a time, a bunch of shallots, several bunches of green onions) at one time (takes me about 20 minutes a week), and putting them in separate ziplocks, I can have my onions and eat them too! (Not quite as good as cake, but almost as tasty when added to the right dishes.

Prep my meals the day before
It is very helpful to plan your meals ahead, and prep them the day before.
As soon as I get home from the grocery store I go ahead and prep my veggies for snacking.
MORE INFORMATION:
I wash the fruits & veggies, cut them if necessary and store them properly for freshness. Then when I'm craving a snack I have everything already clean and ready to go! This makes healthy snacking convenient. Sometimes I just need a snack- quick! This does the trick!
If you will be using the same vegetables or fruits for multiple meals, wash and cut them up all at the same time. It will save you from repeating yourself for each following meal and you'll only have to clean up once.
This approach works better for those vegetables and fruits that do not wilt, discolor or become mushy while stored.
