Eating healthy can take a lot of prep time. I cut up and prepare salad fixings for 2-3 days at a time. I make bags of chopped cucumbers, tomatoes, etc. and keep them ready for a fast, delicious salad. Just grab a serving from each bag and add to your plate. Yum!

I couldn't live without my stick blender (immersion blender)- Makes smoothies and soups so much easier to prepare when you don't have to transfer from the blender and clean up is a breeze!
It's true. The times I take to prep all my veggies after I get home from the store & before they get put away, the more I am apt to cook with them or snack from them because it takes less time when I want to cook or eat. Takes just a bit of time at first but pays off BIG later....104
Every veggie possible to prep is ready for a meal, cooked or not...snacks, sandwiches, salads, soups and new recipes!
Inspired by "Assembly Line Salads". I usually take all the ingredients that I put in a salad, wash and prepare them, and put them in separate containers in my fridge. When we're having salad, I put all of the ingredients out in the serving bowls and let everyone build their own. No one has to put up with ingredients they don't like, and prep and clean-up are easy, as the containers just go back in the fridge.
