I add diced zucchini in enchiladas, salads and really most any recipe that calls for veggies. I dice them up and a heat them with pam in a skillet then add the remaining ingredients for that dish, they add fiber and bulk to my low calorie meals, without changing the taste. Just a neat trick to get more veggies in each day.
Adding bulk to food w/o adding a lot of extra calories
Whenever I want to add extra bulk to food w/o adding a lot of calories, I pile on the veggies. Cheese pizza? Load on the sauteed onions, mushrooms, green peppers and diced tomatoes. Whole grain pasta? Tons of fresh veggies, (sautee and blend in blender and add to sauce for finicky kids)!!
Okay, you're not going to put peppers on your Larabar. BUT - you can add veggies and BULK to some snacks that might otherwise be a little lackluster. My favorite: reduced-fat triscuits with Laughing cow light cheese and fresh, chopped tomato, onion and peppers piled high on each one! The cheese helps the veggies stick, and the veggies make a decent snack explode with nutrition and fiber!
