I have an egg white omlette most mornings. I keep a carton of egg whites in the fridge and measure out a serving over browned shredded potatoes (1/4 cup), spinach, squash, onions, or peppers with a sprinkling of cheddar cheeese or tablespoon of light sour cream. Fast, easy and filling.

I've recently been diagnosed with allergies to wheat, oats, soy, malt, barley and rye... I'm not saying go out and find yourself an allergy, but I can't help but think if I hadn't been diagnosed I'd still be in my rut. I'm eating so much better. Fresh fruits, vegis and lower fat meats...
One of my fave prepared meals is made by Cedarlane... it's a turkey bacon, egg white omlette. Great for breakfast... keeps me full and is ready in about 3 mins. A favorite dinner would be a very lean steak (with fat cut off), an artichoke and half a potato. And of course and fruits and vegis I want!
Cheese really does make everything taste better, but for an average 100 calories a pop, I pass as often as I can: no more cheeseburgers, none on salad, minimal on omlettes. Instead, I enjoy cheese as a stand-alone snack where I can enjoy its complex flavor without being outdone by an all-beef patty or the like!
I buy the day old produce and what can't be eaten in a day or two gets chopped and put in ziploc baggies in the freeaer. The fruits are great cooked in oatmeal or baked goods or for smoothies and the veggies are wonderful in omlettes, soups and casseroles. Prepping the items and freezing them is a great time saver too!!!
