Try using a vegetable peeler to peel a zucchini or two. then cook it quickly like it were fettuccine. Not only it makes a great healthy substitute (with way less carbs than pasta), it also tastes great!

toss it with a little butter and herbs. maybe some chopped garlic, sauted onion and diced red peppers... yummy!

There was a recipe in SP that uses eggplant as pasta. I do the same with zucchini. Slice it into thin pieces like fettuccine and prepare with sauce as for pasta.
You can save alot of calories and enjoy all your favorite pasta dish by just replacing the pasta with vegetables. Try replacing your pasta with zucchini, cauliflower or broccoli. It taste great and all the restaurant like Olive Garden, Macaroni Grill will be happy to replace the pasta for veggies.
