Use almond flour (ground almonds) or coconut flour instead of wheat. The nutritional value is MUCH higher than wheat and the end products are delicious, not dry like rice flour can be. There are cook books themed around these flours available on line.

I have substituted wheat bread for Quinona or Rye bread, rice cookies, etc.
I have substituted wheat bread for Quinona or Rye bread (you got to check the labels bcs. many although they say "Rye" or others, wheat still part of the ingredients, just cutting pastries and all wheat products have helped me shed 6 pounds so far in only 2 weeks :)
To make casserole toppings healthier, substitute 1/3 to 1/2 of your bread crumbs with wheat germ. The delicious nutty tasting wheat germ will help you meet your daily requirements of protein, vitamins and minerals!
