Up to 80% of the Vitamin C in oranges, lemons, and limes is in the pith. The pith is the white inner peel. It also contains fiber and trace minerals.

The pith is edible - in fact, it's good for you. If you have a juicer, toss the pith in with the fruit. If you're eating a fresh orange, learn to like the pith!
