This is agreat idea, and I use it myself. But dont limit it to frozen veggies!!! What about fruit, eggs, meat, fish, nuts, seeds, pulses whether leftover, frozen, fresh or canned. The choice is as wide as your imagination. You could have a strictly savoury dish of fried rice, with chicken and veg, with a touch of spice or soy sauce. You could liven it up with a few chopped apricots, or pineapple chunks and a few slivered almond for a savoury/sweet dish. You could even use left over boiled rice with chopped fruit, nuts or dried fruit, and serve hot or cold with plain low fat yogurt and/or a little pureed strawberries or blueberries. In fact rice is so versatile, and there are numerous varieties to extend your "Risotto Repertoire"!
