When I really want a snack, I grab a wedge of Laughing Cow cheese...usually the original light swiss variety. It's creamy and rich and only 35 calories, but I feel satisfied.

    I make a mock chicken cordon bleu with the laughing cow wedges. Absolutely delicious. Pound out your 4 oz chicken breast portion until it is pretty thin, put a couple of slices of 97% fat free honey ham or black forest ham, spread the cheese wedge and roll. Secure with a toothpick and roll in Italian season bread crumbs. Spray with no-fat cooking spray and bake until browned and slightly crispy. Yum!!!

    this stuff is so good! Also good with apples, in omelets/scrambles, on crackers, on sandwiches. great snack w/ low cal and a bit of protein in there

    I spread the cheese onto a WASA cracker and it's a great crunchy snack, very satisfying!

    It's really good. The last few days I've had it on some celery for a snack. 2 wedges of cheese, 6 strips of celery (3-4in long)...75 calories and a wonderful snack!
