Laughing Cow




When I really want a snack, I grab a wedge of Laughing Cow cheese...usually the original light swiss variety. It's creamy and rich and only 35 calories, but I feel satisfied.

  • I make a mock chicken cordon bleu with the laughing cow wedges. Absolutely delicious. Pound out your 4 oz chicken breast portion until it is pretty thin, put a couple of slices of 97% fat free honey ham or black forest ham, spread the cheese wedge and roll. Secure with a toothpick and roll in Italian season bread crumbs. Spray with no-fat cooking spray and bake until browned and slightly crispy. Yum!!! - by SLIMKIM2B
