When you are cooking dinner - think about leftovers.
Make 2 or 3 extra servings & use that for lunch or dinner over the next week - Great for Chili (put on baked potato or make taco salad) or Grilled Chicken.
Best example is Chicken with green peppers :
1st night - Chicken Fajitas with Whole Wheat Tortillas, Salsa, fat free sour cream and cheese
Lunch - put leftover chicken in container and leaf lettuce in another container, heat chicken and put over lettuce
Lunch - add baked potato - heat together.
