When I am eating salad, I keep the dressing on the side and dip my fork into it before spearing some veggies. I taste the dressing without overdoing it with the calories!

If you have a hard time being "good" at buffets (or holiday meals); try taking only 1-2 bites of each item. This way, you get to enjoy a variety of foods (the reason I go to buffets in the first place); and hopefully you can have the stuff that's not as good for you without overdoing it.

Maybe it sounds strange, but I find if I eat my salad with my fingers, I am satisfied with no dressing on the salad. I don't really like fat free dressing, so no dressing really saves calories. If I want to eat with a fork, I use plain red wine vinegar or a squeeze of fresh lemon and a sprinkling of pepper
When you are served salad with dressing you can cut the amount of fat and salt significantly and still enjoy your side dish. Just spoon some of your water on the salad. Much of the heavy dressing will go to the bottom of the bowl. Then you'll be able to eat your veggies without all the calories you did not want! This trick works particularly well with cole slaw.
