This sounds like a good trick--esp. for omelets. I'm thinking that with the cottage cheese, one may not have to add salt to their omelet either. I'll have to try it sometime.

Cottage Cheese A Diet Food!
Cottage cheese is low in fat and carbs & very high in protein. Cottage Cheese with fruit, Cottage Cheese on a bed of lettuce, Cottage Cheese in salad with flaxseeds, cottage cheese with chopped oinion and parsley flakes, cottage cheese w/matchstick carrots It's a great diet food.
