Iceberg Lettuce, How I Love Thee...

Iceberg lettuce has a bad reputation. Which is a shame! So, here are some reasons why you should invite iceberg back into your healthy eating plan.
1. its inexpensive
2. mostly water (= hydration)
3. mostly fiber (= more fiber!! -wink, wink!)
4. adds bulk to regular salads (i.e. more food!! yay!)
5. neutral taste (you went to the trouble to make your own salad dressing you should at least taste it!) AND
6. memories (lunch box sandwiches! yum!)

Crispier Lettuce

Keep lettuce crispier by removing the heart, then storing in a zip-lock bag with a wet paper towel. This works with any type of lettuce.

Salad mix up

I add fresh cilantro and basil to my green salads for a different taste. I find that the same salad over and over can become boring… Depending on how much of each is added you don’t really need much dressing at all if any due to the strong flavors in herbs.

Prolonging the life of greens

I buy the big containers of spinach and spring mix. To prolong their life, I wrap two paper towels into them by gently lifting the bottom and then covering the top. I will also wrap a damp paper towel around my romaine lettuce to keep ithe leaves from turning brown as well. Works great!

Go green to wash the greens

Sew a drawstring bag from two kitchen towels. When you wash your lettuce, you can put it in the bag and shake so that the towels absorb the moisture. The towel bag can be washed and recycled. Use this for washing grapes too! emoticon emoticon
