Getting veggies for breakfast...

I have been using Green Giant frozen veggies that already have seasoning on them in my eggs this week! For delicious scrambled veggies that are quick and easy.

(I use Aldi's Fit & Active Egg whites)

Easy Way To Poach Eggs

I LOVE poached eggs for breakfast and a fast and easy way to poach them is in the microwave. I get a bowl and fill it about 1/3 with water and heat it for 2 minute in the microwave. I then crack open two eggs into the water and microwave for another minute. Once done, I gently pour out excess water and then add salt and pepper to taste. YUM!

A great way to eat healthy, and enjoy good foods is to take advantage of the summer time farmer's markets! Check your local papers/ towns for times and dates where locals sell their fresh, organic, healthy goods! It's can be a fun event for the family; help support local farmers, and help your community; and if you have never tasted a locally grown tomato; your salads and taste buds have been missing out! A good opportunity to try something new, and cost many goods are cost effective!

Lower Calorie Scrambled Eggs

Standard scrambled eggs call for 3 eggs, some milk, and salt & pepper to taste. I replace the 3 eggs with 2 egg whites and 1 full egg, and I replace the milk with a splash of water. You reduce the calories this way, and I swear you can't taste a difference at all.

Bag Omelet

Use this camping recipe as a quick easy to clean up breakfast at home. Need pan of boiling water, heavy Ziploc or steamer bag, 2 eggs & whatever you would put in an omelet. (peppers, onion, tomato, cheese, ham, seasonings) Place eggs & other items in bag but donít overload. Squish the bag with your fingers to make sure everything is mixed. Making sure bag does not touch edge of pan drop in water for about 12 minutes, check center of omelet to make sure it is done. Eat out of bag or put on plate.

Bacon Salt

There's this stuff called "Bacon Salt". It has the flavor of bacon but not neary the amount of bad stuff you don't want. I sprinkle it into my scrambled eggs when I am craving bacon! emoticon

Cheaper Egg Beaters---Egg Whites

emoticon Instead of buying high priced egg beaters or egg whites in the fancy carton it is actually cheaper to buy farm fresh eggs or eggs at your grocery store and separate them even if you don't find a use for the yolks.

Hard Boiled Eggs

If you need to cook hard boiled eggs and you have older and fresher eggs in your fridge, use the older ones, they will peel easier.

Switch to Medium Eggs

To me, 2 eggs makes a nice weekend breakfast, but 1 egg feels like it isn't worth getting a pan dirty. Instead, limit the portion size by buying smaller eggs.
You'll save about 30 calories and 2 grams of fat per egg (vs. jumbo) without it looking like fewer eggs on your plate. They're cheaper too!

Microwave "Eggs N Muffin Pan"

This makes for a fast and easy breakfast. The egg cooks up so that it can fit on an English Muffin (or a Whole Wheat Sandwich Thin.) Scramble up an egg, or egg whites - add in toppings like ham, cheese, spinach, onions, mushrooms, peppers etc and you have a yummy breakfast sandwich!
