Meat + soup + crockpot

Pretty much any kind of meat (pork roast, pork chops, chicken breast, bone-in chicken, beef roast, etc.) can be put in the crockpot with pretty much any kind of "cream of X" soup (broccoli, mushroom, onion, potato) and will become a delicious meal.

Batch Cooking in Crockpot

I try to cook more than 1 meal at a time in my crockpot. For example, the other day I cooked a mixture of chopped onions, celery, garlic, carrots, mushrooms & ground turkey underneath pork chops. When the pork chops were done, I portioned out the ground turkey mixture in 10 oz. servings (bcuz I cook for 2) & froze them. Now I'll have meat pre-cooked for spaghetti, stir-fry, etc. The broth underneath was put in a container in the fridge & the fat removed the next day. Now I have homemade broth, as well.

Crockpot cooking

When cooking in a crockpot, use the liner bags to separate veggies from meats if you don't want them to soak up the juice. Meat in one bag on the bottom, veggies in another on top and everything keeps it's own flavor.

Ready Made Meals in Minutes

I always feel pressed for time when trying to cook dinner on weeknights & I hate eating late! So on the nights I do have time (& on weekends) I use my crockpot and make other large meals that freeze well. Ready made meals in minutes! emoticon

I've found a wonderful blog that has so many crockpot recipes - just search on "A Year of Slow Cooking". The Chicken Parmesan is wonderful and so easy to make. emoticon
