Reheat meat without drying it out!

This is a great trick to use during the holidays!

Fill a saucepan size pot about half way with water and put it on the stove on high. As the water boils, nestle a metal colander, strainer or steamer basket into the top of the pot. Make sure the water in the pot is not high enough to come into the bottom of the colander. Place the meat you are reheating into the colander - don't overfill it. Continued...

Portion Control

Buy meat in bulk... divide ground beef, chicken, etc... Freeze in individual portions in Ziplock baggies... when you want to make a dish, you just grab a bag... defrosts quick... also cheaper than buying smaller packages.

If you're cooking for 2 a lot... make portions for 2... and so on.

Rinse the fat

When you brown ground beef... don't just strain it. Rinse it. You keep the flavor and save fat & calories. This tip is especially useful when yuo compare super lean ground beef to regular ground beef. A 4-ounce raw portion of regular hamburger that has been cooked, drained and rinsed has approximately 155 calories, 9g fat, 4g saturated fat and 46 mg cholesterol according to my research.
