Prepare lunches for a few days.

Instead of making a salad every morning, I started making a few salads on Sunday. I put them in reusable containers. I'd make a few basic salads and stack them. Each morning I would pull out a salad and left over protein from the previous evenings dinner which I would then add. The changing protein kept the lunches from being boring and it saved a lot of time in the morning.
