Get bored with carrot sticks? Make a wrap with hummus and vegetables. Two tablespoons of hummus is a whole lot when put on a small whole wheat tortilla. Toss some veggies you already have on hand in , and you have an instant serving of vegetables for a very satisfying snack.
If you have a hard time being "good" at buffets (or holiday meals); try taking only 1-2 bites of each item. This way, you get to enjoy a variety of foods (the reason I go to buffets in the first place); and hopefully you can have the stuff that's not as good for you without overdoing it.
I have trouble making it to my protein count. I'm usually one or two points short.
So I add shredded coconut to a piece of peanut-butter toast. It might sound odd, but it adds a little sweetness and flavor to the snack without adding a lot of extra calories!
