Many years ago I read an article regarding canned ham and how it just tastes "chemically" and not smoked like a bone-in ham. In the article they said it's because chemical smoke is used but if you want to make it taste just like an old-fashioned ham baste it with vanilla extract! I've been doing that ever since and you would not believe how delicious it is! The ham winds up being a little sweetened but the chemical taste is GONE!

This is a great way to save money when making fresh stock that uses up those things that wind up in the compost or garbage anyways. Then when I am going to make stock (veg or chicken) I toss them into the pot with my water and herbs.
