1LB Ground Meat = 4 Meals with 4 servings per meal!!!

Use 1lb ground meat and lots of veggies to make 4 different meals! Add bulk with lots of different veggies (shredded or chopped). You get up to 4 servings per meal (approx. 12-16 servings). I stretch meat and save money too. I do the same with boneless chicken breast and boneless pork. Some weeks I get 12-14 individual meals that I would add different side dishes, salads or more veggies too! All my lunch & dinner entrées for the week done!!

Iceberg Lettuce, How I Love Thee...

Iceberg lettuce has a bad reputation. Which is a shame! So, here are some reasons why you should invite iceberg back into your healthy eating plan.
1. its inexpensive
2. mostly water (= hydration)
3. mostly fiber (= more fiber!! -wink, wink!)
4. adds bulk to regular salads (i.e. more food!! yay!)
5. neutral taste (you went to the trouble to make your own salad dressing you should at least taste it!) AND
6. memories (lunch box sandwiches! yum!)

Weaning Yourself from Salad Dressing

Regular salad dressing is full of fat and the healthier ones don't taste too good. Using plain yogurt or Greek yogurt is great, but sometimes you just want a familiar taste. I sometimes use 1Tbsp of my favorite regular salad dressing along with some citrus juice and dried herbs and seasonings. It's the salad dressing I love, but not so much of it! It helps me to "wean" myself from the unhealthier dressing as I go through my journey.
