I dice up a few onions and green pepper and put them in the fridge for the week. So when I make omelets, hot sandwiches, scrambled eggs or the other many things I like them in. I am more likely to use them because they are ready to use. I figure I add in about 2-3 servings of veggie a week that I would have skipped out on.

I just measure out 100 calorie servings or 1 serving size and store them in tiny reusable bowls with lids. The kids love to help and it might take me 20 minutes a month. It also helps to make sure i do not grab the whole box of cheese-its when watching a movie!
