I've put one simple question on my cupboards and fridge : Are you really hungry? It's very efficient for eliminating careless snacking and to promote conscious eating... Plus, it's a great conversation starter for guests that come over!
When I feel discouraged because I'm not loosing quickly enough, I go to the grocery store and put in my cart 1 pound of butter for each pound I've lost so far. When I see how much butter I end up with, I realize that I shouldn't think of how much I still have to loose, but how much I've lost!
