I have always cooked in bulk making full use of my freezer thinking I was being as economical as possible. I have found the more I cook, the more I eat so I've started weighing + cooking single portions. I find I am more likely to stay within my calorie range, not over-eat (my biggest downfall), so my food lasts me longer and less trips to the shops, and the bonus is smaller portions cook so much faster that even though you cook more often, overall, you use less gas and electricity. If I have something I need to think about, even if it is just next weeks menus, appointments work patterns or even something more serious, I put it on hold until I go for my evening run and think things over then. By the time I get home I have organised myself and the run is over before I know it.
Keep your till (cash register) receipt and tick off the products as you use them through the week. You then have a list of what you need and what you still have from the previous week. This stops you buying ingredients out of habit and having to bin excess unused food. you could even delay your shopping trip until you have used the items. Put them into spark recipe finder for to try some new meals.
