I cut up 2 heads of lettuce at the beginning of the week and put them in a freezer bag. Then I chop up my bell peppers, carrots, cucumber, cabbage and celery in another bag. This way I have a salad mixed up and ready every time I have the urge to eat something quick- now there is no excuses for me to grab cookies or ice cream- salad is just as easy to prepare :) and it doesnt go bad if you use the freezer bags to lock in the freshness
Before you eat, be sure to portion out leftovers for the week. Keep in mind the portion sizes, and only portion out one serving for each container. After you put away the leftovers, it's just another reminder to eat what you've already portioned out for that meal.
I love these, not just because they're already portioned out into servings, but also because they keep the guacamole fresh and green until I'm ready to eat it! I don't usually like buying things that are pre-packaged into smaller portions, but I think it just makes sense with guacamole, since it means I waste so much less!
