Paleo Recipe for Mango Coconut Milk Pudding

Ingredients:
1 can whole coconut milk
2 mangos, diced & pureed. Set aside a little of the fruit.
1 egg yolk
1/4 tsp of cinnamon
1 tsp vanilla

Peel & dice the mangos. Set about 1 cup aside for later. Puree rest in a blender.
Bring the coconut milk to a low simmer in a saucepan, just bubbling around the edges. Stir with whisk while bringing up to temp.
Beat the egg yolk in a small bowl. Take some hot coconut milk & slowly & carefully drip it into the egg yolk while whisking it.

Healthy Pre-Workout Protein Drink Recipe

* 10 oz of pure coconut water. I really like the one that I found at Whole Foods (Amy & Brian Natural Coconut juice with pulp), since it gives a richer and sweeter taste.
* One scoop (30 g) of Bioplex pure egg white powder
* Some frozen blueberries (maybe 2 tablespoons)
* Small dash of cinnamon, which helps the flavor and has health benefits too (aids blood sugar control, reduces cholesterol, and improves weight loss).
* Drink about 1 hour before your workout

Some Tips for Managing the Temptations of Holiday Eating

What has worked for me is to sample and savor. Ever heard of the 3 bite rule? The 1st bite of something has the most flavor and delights your taste buds. The 2nd bite has less flavor than the 1st. The 3rd bite has even less flavor than the 2nd. If you have more bites, the flavor will be minimal and the same level of enjoyment just isnít really there anymore. You're just eating to be eating beyond that. So, take a very small amount of the dishes that interest you the most. Eat slowly. Savor them!

Iím a fan of creating rhyming phrases to help remember important things. Hence the title: Single ingredients over expedience. I hope it helps you remember this healthy tip when youíre eating out, shopping, and preparing a meal.

It's so tempting to cut corners with an expedient meal at a fast food drive-thru or pick up pre-made mixes to make a quick meal at home. But, if you care about your health and your weight and your fitness, you have to take ownership back of what goes in your body.

The Secret to Delicious Brussels Sprouts, Finally!

Brussels sprouts are great for you! They contain "sulforaphane", a chemical that is believed to have potent anti-cancer properties. They are also a source of indole-3-carbinol, which boosts DNA repair in cells and appears to block the growth of cancer cells. But, I've never liked them because the ones I had were always boiled (which actually ruins their health benefits). That is until I tried them roasted in the oven with just a little bit of olive oil, salt & pepper. 30 mins at 400F. Delicious!
