Kale can be added to anything. You can have it in a salad, soup, stew, etc. I even add it to my scrambled eggs and frittatas. I like to cook it by itself till it gets crisp and I have it on my taco.

One way to prevent over eating

This is a cooking for one to two people idea.
Cook a large meal, plate up the correct portions for everyone and then put all of the leftovers into portion sized containers before sitting down to eat. This way you won't be tempted to nibble on the leftovers as you put them away.

Yogurt for dessert

I take half a cup of vanilla yogurt, add a cup of sliced strawberries with a drizzle (about a tsp) of honey. Filling and delicious.

Mashed Beans

I cook up 2 cups to 4 cups of pintos beans (soaked overnight) and throw some spices (example: Garlic) in and mash them up. I use them in place of re-fried beans.
