Instead of using just raw fruit in a fruit salad, try adding some rhubarb stewed with a sweetener and its' juice, apple stewed with a teaspoonful of mincemeat, or a piece of stem ginger in syrup chopped finely with some lime juice as the base then add some fresh and canned fruit in juice. This gives a few more options for ringing the changes and if you want some topping use yogurt, low fat custard or low fat home made rice pud made with a sweetener. They are all good served cold for breakfast.
I often cook casseroles, or make rice salads etc, in bulk then freeze in old 500g spread cartons. They stack nicely in the freezer and one carton holds the equivalent of one protein portion, one carb, plus two portions of veg including juices from a stew etc. This cuts down on cooking costs, washing up, and food wastage.It means that if, like me you live alone, you can store a variety of different recipes and have a meal available at a few minutes notice, courtesy of re-heating in a microwave.
