Great Recipes from Cooking Light

At the same time I started Sparkpeople, I subscribed to Cooking LIght Magazine. There are tons of great recipes in these magazines! Every recipe I've tried has been delicious. Even my formerly picky 9-year-old has liked everything I've made. The food is absolutely wonderful - restaurant worthy!

A great low calorie snack

One of my favorite low calorie snacks is frozen pineapple chunks. They sell them at target. I find them great to munch on. They take awhile to eat & taste great.

keeping balanced diet while in calorie range

I am going to try to set up my menu for the next day. Making sure I have carbs throughout the day, and then making sure I have 3 vegetables, and 2 fruits, and enough protein. By planning ahead I can adjust and make sure I have snacks and food spread evenly through the day, and be in the range 4 me

Better (for me) Oatmeal

No more butter and brown sugar for me! I switched to steel cut oats made with Vanilla Almond milk.

Water

I slice a whole lemon and put freshmint mint leaves into a glass pitcher of ice water for a spa-like taste.

Freeze Bananas

I don't like bananas once they "over-ripen". So I freeze my bananas if I can't eat them in time. Frozen bananas are a great treat and they work well in a fruit smoothy too!

Oatmeal with Peanut Butter

For breakfast, I stir 1-2 teaspoons of peanut butter into my prepared old fashioned or steel cut oatmeal. I find that it keeps me very satisfied throughout the morning.

Sweet & Salty Cravings

We all have those 'want something sweet, want something salty' cravings. I bash them both with a small apple, cut and sliced and 2 tbsp of peanut butter. This way the apple is sweet, the PB is a little salty and I don't botch my diet, but instead get in a daily fruit and good protein/fat, too!

A little less mayo

So I love ham and mayo sandwiches so i figured out a way to cut down on the mayo but still have it. Instead of putting it on the bread which soaks it in and makes me want to put more on it, I spead it on the ham. I can see the mayo all over and I use only 1/2 tablespoon!
