I find mash potatoes to be very boring and tasteless, so when I cook them now I'll add a head of cauliflour and boil them together then mash them. Put them in a casserole dish sprinkled with cheddar and broil till the top is browned, Great flavor and everyone loves them. I add extra fresh veggies to everything now. Everyone in my family loves broccoli so we eat it with almost every dinner. It can be a side, a main dish, added to pasta. I even made a pot of chili last weekend and added shredded carrots and broccoli (very finely chopped) just for the nutrients! I have found that substituting salt with red pepper and herbal seasonings take away the need for that salty taste. When things get dull by eating soup or cereal all the time, I switch to coffee mugs or cups. I can take them out on the deck, or just at the table. Easier to handle.
I have been cooking healthy for myself now and I love it. I love cooking vegetables. Plus I now use Sweet potatoes instead of regular ones. Every weekend I sit down for an hour and plan my menu including snacks for the next week. I type it up and post it on my frig. I will plan down to how many calories I will have each day. I make sure that I have about 4 weeks of menus and rotate them. I also try a new recipe each week. I buy brown rice in 20 kilo sacks and then I cook 1 l dry measure at the time and weigh in 150 g portions that I freeze. Three minutes in the micro makes it ready to eat. |
