This is a quick and easy main dish.
1 small salmon fillet 1/2 cup orange juice 1 tsp Dijon mustard fresh spinach leaves
In a small bowl mix together orange juice Dijon mustard to create a glaze. Place the salmon on a microwave-safe plate. Spoon the glaze over the salmon. Put the citrus-dijon salmon in the microwave for about 10-15 minutes. Check the salmon to ensure that it is thoroughly cooked. Arrange the fresh spinach on a serving dish. Lay the salmon on the fresh bed of spinach and add more of the citrus-dijon glaze for presentation. Yum.
