A sweet dish of sauteed summer vegetables, guaranteed to make your mouth water!
1 large zucchini, sliced 5 roma tomatoes, sliced or chopped 1/3 of a sweet onion 3 garlic cloves, minced 1 tbsp olive oil
Slice and prepare all vegetables. When finished, heat oil in a pan on medium heat, and when hot, toss in the onion, and then garlic a little bit later (when the onion begins to turn translucent). Saute', then add in the rest of the vegetables and cover for 15 minutes, stirring every 5 minutes to prevent sticking. When the zucchini is translucent and the tomatoes have been peeled of their skins by the heat, take off the stove and enjoy!
